What you will like about these energy balls
These energy balls are naturally sweet thanks to the use of dates. This recipe is super simple, you won't need to turn on the oven since it is made without cooking.
These energy balls also have the advantage of keep very well over time and can also freeze. Once completed, you can carry everywhere : in the children's lunch box, at the office, in your sports bag...


Energy balls with only 4 ingredients
- Dates : for this recipe I use medjool dates. They are now easily found in supermarkets or organic stores. They are fleshier and softer than other dates. They are ideal for energy balls. Dates are very rich in nutrients, perfect for naturally sweetening these energy balls.
- Almonds : raw almonds, with their skin. They are added to the other ingredients to create texture. They are also very filling. Be careful not to mix them more than necessary, otherwise their oil will come out.
- Cocoa : here we use bitter cocoa. I love its gourmet side! Combined with almond and coconut, it's a delight, in addition to being rich in magnesium!
- Coconut : we use it here grated inside the energy balls, and also as decoration on the outside. We love its gourmet side, even more pronounced when we mix it with cocoa and almond.

How to make energy balls easily?
On the material side, to make these energy balls without cooking you will need either a food processor be a good blender. That's all! Personally, I make them in a blender, I find it more practical.
To make these energy balls, we mix together almonds, pitted dates and some of the grated coconut. Mixing time will vary depending on your device. It will be necessary to scrape the walls to have a homogeneous texture.
Add the bitter cocoa just before finishing mixing. If at this stage the texture is not moist enough to clump together, you can add a little bit of water. This is not always necessary. Then, simply shape into balls in the palm of your hand and roll them in the remaining grated coconut.
How to preserve them well?
These energy balls keep a very long time in the refrigerator (up to 2/3 weeks). I place them in an airtight compartment so that they do not take on the smell of the fridge...
We can also freeze easily : you must first refrigerate them for 30 minutes and then you can place them in a freezer bag and in the freezer. To defrost them afterwards, simply return them to room temperature or in the refrigerator.

- 320 g pitted medjool dates
- 145 g shredded coconut
- 100 g almonds with their skin
- 3,5 cs bitter cocoa
- In the bowl of the mixer / blender, pour the pitted Medjool dates, almonds and 95g grated coconut (keep the rest for decoration).
- Mix high speed for a few moments, the mixture must first be finely chopped. Scrape the edges then restart the mix.
- Add the bitter cocoa then mix again until you obtain a slightly sticky dough. If after several minutes the dough has trouble amalgamating (it depends on your dates) add 1 tbsp of water.
- Pour the dough formed into a container. Pour the remaining coconut onto a plate. With your hands, take the dough and form about 20 balls by rolling them in the palm of your hand.
- Then roll the balls in the grated coconut and place on a baking sheet. Refrigerate 15 minutes to firm them, before tasting.

I used the basic weight of the ingredients and modified it a little.
by putting 100g coconut and 50g ground almonds
I put less dates and a handful of raisins and 3 candied kumquats (it gives a great taste)
I added vanilla and cinnamon
a large spoonful of chia
I didn't put the cocoa but I coated them in cocoa and someone in coconut.
I calculated the values of your recipe as a basis using an app
