Ingredients to plan for the eggnog
To prepare this drink you will need:simple ingredients that you certainly already have in your cupboards:
- milk : whole (my preference because smoother) or semi-skimmed
- egg yolks : this is what will create the texture of the eggnog
- light brown sugar : instead of the white sugar traditionally used, I prefer brown sugar here because it brings even more flavor to the eggnog. Feel free to adjust the amount of sugar to your personal taste.
- cannelle et nutmeg : these are the Christmas spices par excellence!
- salt and vanilla : they reveal all the aromas of this drink.
If you want to add a touch of whipped cream on top, you will also need whipping cream.

How to make eggnog?
He's very simple to prepare eggnog at home. On one side, heat the milk and spices in a saucepan. On the other, whisk the egg yolks and sugar. Finally, combine the two and add the vanilla to obtain this drink with a beautiful golden color.
- First of all, heat the milk with the spices in a pot.
- Apart whisk the egg yolks and brown sugar then put the two together
- We whip, we whip, we whip to avoid lumps!
- Remove from the heat, add vanilla and let cool.
- All that remains is to cover the drink and refrigerate it so that it takes on its ideal texture.
Optionally, for those with a sweet tooth, I recommend adding a touch of whipped cream in a pastry bag (no need to sweeten it in my opinion) and place it on your glasses of eggnog.
My tips for successful homemade eggnog
- Beat the egg yolks and brown sugar well to have a smooth and homogeneous texture.
- do not stop whisking the milk-yolk mixture on the fire to avoid having cooked egg yolk bits in your eggnog.
- if you have lumps in your eggnog: simply pass the mixture through a sieve (fine strainer) to remove them before refrigerating the drink.

How to taste eggnog?
This may seem surprising to you for a winter drink, but eggnog is consumed most often cold. However, it can be reheated if you prefer (without whipped cream). This is also the case when you add a touch of alcohol like rum or whiskey.
How to store this homemade eggnog?
Once made, this eggnog can be stored in an airtight container. in the refrigerator for up to 3 days. I advise you to taste it freshly prepared (on D-day or the day before) it will be better. You will add the whipped cream (optional) when serving in the glasses.

- 600 ml whole milk or failing that, semi-skimmed
- 55 g light brown sugar quantity to dose according to your taste
- 4 egg yolks
- 2 big pinches of cinnamon
- 2 big pinches of nutmeg
- 1 pinch of salt
- 0,25 cc natural vanilla extract
- 200 ml whole cream 30% mg
- Cinnamon for the decor
- In a saucepan, heat the milk with the cinnamon, nutmeg and salt. Stop just before boiling.
- In a bowl, whisk the egg yolks with the brown sugar until the mixture becomes clear and frothy.
- Add a spoonful of hot milk to the yolks while whisking to avoid "cooking" the yolks. Then pour the yolks / sugar mixture into the saucepan.
- Return to heat for a few minutes over medium heat, stirring with a wooden spoon. The mixture should thicken slightly, it will finish thickening in the fridge afterwards.
- Off the heat, pass the mixture through a sieve to remove any pieces of cooked egg yolk, if there are any.
- Add the vanilla then let cool before placing in a container (with spout it is more practical). Cover with cling film and refrigerate until the drink is very cold.
- Pour the contents into glasses and sprinkle with cinnamon (or top with whipped cream below).
- Whip the whipping cream in the bowl of the food processor or with a mixer. Garnish a pastry bag then place a nice dose of whipped cream on each drink. Sprinkle with cinnamon and enjoy.
