When you're not used to making homemade ice cream, you may be held back by a lack of equipment or technique. Here, none of that! With a blender or a food processor, we prepare this nice cream recipe very easily, all in a few minutes. I assure you that to taste it is to adopt it...
What exactly is nice cream?
It's almost an ice cream, hence the name n-icecream. Except that here, no dairy products, no eggs, no fat, no added sugar... To make this banana raspberry nice cream, you need two ingredients : banana and raspberries. That's all! A vegan ice cream, healthy and low in calories.
The secret of this ice cream is the use of bananas ripe then frozen, which once mixed keep their creamy structure like ice cream. Crazy, right?
Some people add water to it and make it more liquid, but I don't, I prefer to keep its creamy texture, which really works with ice cream.

What you will like about this nice raspberry banana cream recipe
Flavor : For this nice cream recipe, I combined banana and raspberry. The banana is very ripe so very sweet, the raspberry therefore brings its little refreshing tangy side. It works particularly well, you'll see.
Texture : Bananas add a lot of creaminess, and help keep a nice texture. Raspberries add water, so be careful not to add too much (see my recipe below). The more raspberries you add, the more liquid the texture will be.
Difficulty level : ultra easy, in 5 minutes your ice cream is ready. You need a blender or a food processor to mix the frozen fruits, that's all.
Tips for making this recipe a success
You have to use ripe bananas, peel them and cut them into small sections. Then, they are placed in the freezer, in a freezer bag or at least airtight container. 24h before to make the nice cream.
I put the bananas in bags up to several weeks in advance: as soon as I have ripe bananas at home (and they don't end up in Banana Bread). That way, the day I want to make a nice cream, it's already ready.
Just before making the ice cream, I take out the bananas approximately 10/15 minutes. They will soften very slightly, enough to be mixed without ending up in glitter.

To get the ideal consistency, I first mix the bananas alone and then add the raspberries. I don't hesitate to scrape the sides of the bowl with a spatula to get a consistency very smooth.
How to store the nice cream?
The nice cream can be eaten directly, in this case it is very melting. If you want to be able to make scoops of ice cream, like in my photos, place your container in the freezer for 30 minutes. Its texture will be just as smooth.
If you have any nice cream left over afterwards, you can easily store it. several weeks in the freezer. Since this ice cream does not contain raw egg or dairy products, it is easy. It can be stored in its container covered with plastic wrap or in an airtight container.

- 200 g frozen raspberries
- At least 24 hours before: peel the bananas and cut them into small sections. Place them in a freezer bag and then in the freezer.
