Two seasonal fruits brought together in a fresh and gourmet dessert: the Peach Melba ! Perfect for sunny days with its vanilla ice cream, peaches in syrup, raspberry coulis, whipped cream and toasted flaked almonds... An easy-to-prepare "quick" dessert that will please all gourmets.

Peach melba, why this name?

This is a dessert created in 1894 for an opera singer, Nellie Melba. In fact, Auguste Escoffier, the great chef decided to create a dessert in her name to thank her for inviting him to one of his performances in London... Today, we still enjoy this creation!

flavors : the deliciousness of summer fruits (peach and raspberry) and the sweetness of vanilla ice cream, topped with a touch of whipped cream...

Texture : there is the coldness of ice cream, the creaminess of whipped cream, the fondant coulis and fruit (peach, raspberry). A little more crunch thanks to the slivered almonds. It remains very light, perfect for sunny days.

Difficulty level : easy! What will take the most time is to make the peaches in syrup at home. You can make this peach melba recipe even more "express" by buying canned peaches in syrup.

The choice of ingredients

  • peaches : for the peach melba, take yellow peaches (I really prefer yellow ones in this dessert), they must not be too ripe to be able to withstand cooking.
  • Vanilla pod : it flavors the syrup in which we poach the peaches. I always prefer to opt for a pod but know that there are now powdered vanilla beans sold in stores, more economical.
  • Raspberries : for the coulis part, you can either blend fresh raspberries, or use raspberry coulis for more speed. In this case, it must be little or not sweet.
  • Vanilla ice cream : you can opt for commercial vanilla ice cream or a homemade vanilla ice cream made in an ice cream maker.

How to make peach melba?

  1. We prepare the peaches in syrup : the peaches are cooked in a vanilla bean syrup then cooled to be used in the peach melba.
  2. We do the raspberry sauce by blending fresh raspberries and removing the seeds.
  3. On toast the slivered almonds in the pan to reveal their taste.
  4. We prepare the firm whipped cream whipping the liquid cream, icing sugar and a little mascarpone.
  5. Make way for establishing of each peach melba: in the glass, we alternate the different layers to form the fruity and colorful dessert!

Ingredients 
Peaches in syrup
  • 4/5 yellow peaches not too ripe
  • 1 liter water
  • 200 g granulated sugar
  • 1 vanilla pod or powdered vanilla beans
no-bake Raspberry sauce !
  • 250 g fresh raspberries or ready-made raspberry coulis (little or not sweet)
Whipped cream
  • 200 g heavy whipping cream 30%
  • 100 g mascarpone
  • 1,5 cs icing sugar
Assembly of melba peaches
  • 500 ml vanilla ice cream
  • 3 cs slivered almonds
  • 125 g fresh raspberries
Prepare in advance 
Peaches in syrup
  • To easily remove the skin from the peaches, immerse them for 1 minute in boiling water, then in a container of cold water. Peel them.
  • Cut the vanilla pod in half lengthwise then scrape out the seeds. In a saucepan, pour the water, powdered sugar, vanilla seeds and pod. Add the peaches then start cooking until a slight boil is reached. The total cooking should be about 8/10 minutes. It depends on the peaches.
  • Drain the peaches from the syrup. Let them cool then cut them into quarters.

  • With an immersion blender, blend the fresh raspberries then filter the coulis through a sieve to remove the seeds.
Sliced almonds
  • In a small skillet, dry toast the slivered almonds to reveal all their flavor. Stir regularly. They must be golden (do not let it grill too long).
Whipped cream
  • Whip the very cold liquid cream, as soon as it begins to form, add the icing sugar in rain. Then add the mascarpone and whisk until you have a firm whipped cream. Fill a piping bag fitted with a fluted tip.
Assembly of melba peaches
  • Take 4 stemmed glasses (or ice glasses). For the assembly, alternate peach in syrup, fresh raspberries and raspberry coulis and vanilla ice cream. Finish by adding whipped cream on top and a few slivered almonds. Treat yourself without delay!
Notes
These peach melba are "minute" desserts to be assembled just before serving (because of the ice cream).
