
This tiramisu in a fruity version is original and very light (I didn't add alcohol, so the children can have it too...).
The taste of peaches goes particularly well with the creaminess of the mascarpone cream - not very sweet, so we enjoy it! -.
- Recipe for 4 glasses (quick to do! but plan a rest period):
- Peel 4 fairly firm peaches, then cut them into small cubes.
- Pour a little peach nectar into a plate, soak ladyfingers (count 4 ladyfingers/glass, or 16 in total). You just have to go back and forth, otherwise the ladyfingers will be too soft!
- Take 3 eggs, separate the yolks from the whites.
- Whisk the egg yolks with 60g of caster sugar.
- Add 250g of mascarpone to the previous mixture, and mix until you obtain a smooth and creamy texture.
- Beat the egg whites until stiff. (with a pinch of salt).
- Add the egg whites to the previous mixture.
- Prepare the glasses, place 2 ladyfingers in the bottom of each, place the peach cubes, another 2 ladyfingers then cover with mascarpone cream.
- Refrigerate for at least 4 hours.
- Just before serving, sprinkle with unsweetened cocoa (Van Houten type) and taste!

I used a can of apricots in syrup and dipped the sponge cake (I prefer sponge cake to ladyfingers) in the syrup. Everyone loved it!
It was just too too good!! We replaced the chocolate powder with a homemade raspberry coulis and fresh raspberries, it was delicious. Just sweet as it should be, it's a superb recipe!
