
A delicious and easy-to-prepare dessert recipe: the Milk chocolate carambar tart ! We love its crispy shortcrust pastry and its filling of melted caramels mixed with chocolate...
Like a dive into childhood with these Carambars... The longest part of this recipe, I warn you, is removing the little paper wrappers one by one! Apart from that, this recipe is really very easy to do.
What ingredients for this carambar chocolate tart?
First you need the ingredients for the shortbread : soft butter, icing sugar, cornstarch, egg and a pinch of salt.
For the ganache you will need about thirty caramel carambars, whole liquid cream 30% mg and pastry milk chocolate.
I advise you to opt for quality milk chocolate slightly sweet, because the carambars already are. There is also another option: make the ganache with lightly bodied dark pastry chocolate, replacing milk chocolate. The flavors will be different though, be aware.

How to make a carambar pie?
First, we prepare a shortbread : mix all the ingredients, finishing with the egg. Leave the ball of dough to rest in the refrigerator for 1 hour.
We then roll out the dough and make it white cook in a family size mold.
For carambar ganache, we pour the cream and the carambars in a saucepan. Then add the chocolate and smooth everything. Then pour over the baked pie shell, and we refrigerate 2 hours before tasting.

- 95 g softened butter
- 90 g icing sugar
- 200 g all-purpose flour
- 50 g cornstarch (cornstarch)
- Pinch of salt
- 1 oeuf
- 25cl heavy whipping cream 30%
- 30 caramel carambars
- 150 g pastry milk chocolate
- Decoration: slivered almonds
- Mix the soft butter, icing sugar, cornstarch, salt. Finish with the flour. Sand the dough well between your fingers and add the egg.
- Form a ball, wrap it in cling film and refrigerate for 1 hour. Preheat the oven to 180 ° traditional heat.
- Roll out the dough then roll out the dough in a family size mold, bake for 25 minutes.
- Heat the whole liquid cream in a saucepan. Melt the caramel carambars over low heat. Mix until the carambars are completely melted.
- Off the heat, add the milk chocolate in pieces, and stir well. The ganache obtained should be very smooth.
- Pour this ganache over the cooked dough base. Refrigerate to harden for about 2 hours.
- For decoration, I roasted flaked almonds in a pan, just a few minutes, so that they take on a nice golden hue.
