
An easy and comforting recipe: Coco rocks ! Only 5 ingredients for these golden rocks with a soft coconut center... Optionally, dip them like me in a little dark chocolate and then they become totally irresistible!

- difficulty level : ultra simple! A perfect recipe to make with the family. No need for a mold! Like me, you can make your coconut rocks with a piping bag but it is not an obligation: you can also shape the rocks by hand.

5 ingredients only!
- shredded coconut : here we need finely grated coconut. You can also do it with large shavings but the texture will be less pleasant in the mouth.
- egg whites : I prefer large egg whites, in fact it's a great recipe if you have egg whites left over and don't know what to do with them!
- granulated sugar : it contributes to the softness of the rocks, it also helps bind the coconut and the whites.
- vanilla : I add natural vanilla extract to bring out the coconut flavor.
- chocolate : it's optional but you can, like me, dip the base of your coconut rocks in a little melted chocolate, it's simple and so good!
How to make coconut rocks?
- On mixed all the ingredients
- Is the heats up in a pot
- We do domes on a baking tray
- On bake !
- We let warm
- We do melt the chocolate
- On soak the coconut rocks in melted chocolate
- On let it harden chocolate
- We enjoy!

My advice for making your coconut chocolate rocks a success
- do not heat too much mixing in the pan: just a little so that the different ingredients stick together.
- if you use a piping bag like me, be generous with the dose placed to form the coconut rocks on the cooking plate: the plumper they are, the softer they are.
- stop cooking as soon as the rocks start to turn golden : this keeps the inside soft and melting.
How to preserve coconut rocks?
These coconut rocks keep very well at room temperature about 4 days in an airtight container. Care must be taken to place them away from heat and sunlight.
They can also be frozen for up to 3 months (before dipping them in the melted chocolate). Simply place them flat in an airtight container. To defrost them before tasting, you will simply have to return the coconut rocks to room temperature.

- 5 egg whites large caliber preferably
- 270 g granulated sugar
- 300 g shredded coconut
- 2 cc natural vanilla extract
- 100 g dark chocolate pastry + or - full-bodied according to your tastes
- Preheat the oven to 180° traditional heat. Place a parchment sheet on a baking tray.
- In a saucepan, place the unbeaten egg whites, grated coconut, powdered sugar and vanilla. Heat over low heat for a few minutes, stirring so that the mixture blends well. Leave to cool until later.
- Fill a piping bag with an 8-pronged fluted nozzle or shape the rocks by hand. Place domes of dough on the baking paper, spacing them out (you can bake twice in succession).
- Bake the tray halfway up: + or - 15 minutes, it depends on the size of the domes and your oven. They are ready as soon as they start to brown (if you overcook them they lose their softness).
- Remove from the oven, remove them from the paper, and let them cool on a rack.
- Option with chocolate: melt the chocolate in a bain-marie. Dip the base of each rock in the melted chocolate. Scrape the bottom over the edge of the container. Place on baking paper until the chocolate hardens.
- To prolong the softness of coconut rocks, store them in an airtight container.

Also tested these holidays but without chocolate because there was no more in the cupboards and impossible to buy more. But even without everyone loved it, I replaced the vanilla with vanilla sugar, I keep the recipe for the times when there are egg whites left;)

Thank you for this very good recipe. It is not too sweet. I just had a small problem with the cooking because they were a little overcooked. About ten minutes is enough for my fan oven but that does not detract from the quality of the recipe! ☺️

I tested it as I didn't have enough grated coconut anymore and I added almond powder and honestly it was really delicious.

I still can't do it...
After adding the egg whites, sugar, coconut powder and vanilla, I mix over low heat for a few minutes.
I always end up with a sort of grainy semolina.
It's impossible to do anything in a piping bag.

An excellent recipe, especially moist with the chocolate that enhances the rock. Delicious!
For the size on the baking sheet, I prefer to make them with 2 teaspoons, more airy and different than with a pocket, more linear, depending on the final result sought.
