Eskimos Strawberry, Yogurt & Mango Sorbet

That’s it, summer is well and truly here!

A good excuse to get back to making good homemade ice cream or sorbets.

This time, they take the form of pretty individual multicolored Eskimos, filled with good things: strawberry, mango and whole milk yogurt with a touch of honey for the sweetness :-)

These strawberry, yogurt & mango sorbet ice creams are very refreshing, perfect to enjoy in the afternoon under the sun...

 

Recipe (x12 Eskimos)

- In a container, pour the equivalent of 3 Greek yogurts (420g) and add about 3 tablespoons of brown sugar (more or less according to your taste...), mix well so that the sugar crystals can dissolve completely.

- In a blender, mix 250g of strawberries with 1 tablespoon of honey. Set aside the resulting coulis.

- Do the same with 250g of mangoes (fresh or frozen), adding 1 tablespoon of honey and 100ml of apple juice. Set aside.

- Start filling your ice cream mold always following the same order: 2 teaspoons of strawberry, 1 teaspoon of yogurt, 2 teaspoons of mango, 1 teaspoon of yogurt and repeat until completely filled.

- To create a marbled effect, quickly run the tip of a knife along the wall of each mold from bottom to top.

- Insert the wooden sticks and leave to set for at least 6 hours.

      Hi, so that's a very good question! I would say several months if the freezer temperature doesn't vary. I'm not an expert on that... I usually eat them pretty quickly! See you soon
