How to make chocolate caramel candy apples?
- We prick each apple washed and dried with a wooden pick
- Dip the apples in salted butter caramel coulis then refrigerate
- Melt the dark chocolate then each apple is dipped in chocolate
- With a piping bag we add thin lines of white chocolate
- Lightly mix the two chocolates with a wooden pick and refrigerate before tasting

You can make this caramel apple recipe by covering entirely dark chocolate (by adding chopped hazelnuts for example) or entirely of white chocolate (by adding chocolate vermicelli for example).

- 5 apples Granny Smith (little sweet) or other apple
- 350 g salted butter caramel coulis
- 300 g dark chocolate pastry 52% cocoa
- 80 g White chocolate
- Wash and core the apples. Prick a wooden stick in the center so that you can easily dip them in the fillings afterwards.
- In a high-sided bowl, heat the salted butter caramel coulis a little bit in the microwave. Then dip the apples one by one, coating them, then place them on a baking sheet covered with parchment paper. Place in the refrigerator for about 30 minutes, until the cream sets a little (it will never be hard).
- Melt the dark chocolate in a bain-marie or in the microwave and do the same with the white chocolate. Put the melted white chocolate in a piping bag and finely cut the end of the bag.
- Dip the apples one by one into the dark chocolate and place them on a high wire rack (the excess chocolate will run through the wire rack). Without waiting for it to freeze, add spirals of melted white chocolate with the piping bag all around the apple.
- With a wooden pick, make small strokes to mix the white chocolate with the dark chocolate, like a spider's web. Set in the refrigerator, the chocolate will harden. Cover the white sticks in the center of each apple with cardboard straws in Halloween colors.
