An easy and seasonal dessert: the No-Bake Strawberry Tart ! No need to turn on the oven to prepare it thanks to its base of mixed biscuits, its creamy mascarpone whipped cream and its juicy strawberries... Quick to prepare at home, it will delight all gourmets.

  • difficulty level : this no-bake strawberry tart is very easy to make, and above all quick! I use a pastry circle set to 20 cm but you can also take a 20cm springform pan if you prefer.

The choice of ingredients

  • strawberries : For my desserts, I always choose gariguette strawberries. They always have a beautiful shape and are deliciously sweet.
  • dry biscuits : You have several options. You can choose from speculoos biscuits, English dry biscuits like McVities, or Breton galettes. Here, I opted for McVities biscuits.
  • Mascarpone/cream : this is the ideal duo when you want whipped cream that holds its shape well. Here the ratio is in favor of mascarpone, which allows the whole thing to hold its shape very well (easy to pipe). This mascarpone whipped cream allows us to make a strawberry tart without pastry cream.

How to make a no-bake strawberry tart?

  1. On mixes the biscuits
  2. They are mixed with melted butter
  3. We whip the mascarpone, cream and vanilla
  4. We add the icing sugar
  5. Pour the whipped cream into the sleeve pocket
  6. On decorated the pie crust
  7. On put down the strawberries on top
  8. Enjoy the no-bake strawberry tart!

My tips for making a successful no-bake strawberry tart

  • press the biscuit mixture firmly into the bottom of the circle : this allows the crumbs to stick well with the melted butter which sets them once in the refrigerator.
  • the mascarpone whipped cream is ready when sharp peaks form in your bowl : it does not move and can be put in a piping bag.
  • squeeze the strawberry halves together well when decorating : this allows you to have even more fruit in each portion.

How to store your no-bake strawberry pie?

This pie keeps in the refrigerator for up to 2-3 days Placed in an airtight container or wrapped in plastic wrap. I still recommend preparing it at the last minute to prevent the strawberries from spoiling.

A no-bake Gariguette strawberry tart with a creamy vanilla mascarpone whipped cream. An easy dessert without turning on the oven!

Ingredients 
Biscuit base
  • 250 g dry biscuits (e.g. McVities, speculoos, Breton pancakes, etc.)
  • 85 g soft butter, melted
Garnish
  • 250 g mascarpone very cold
  • 160 g heavy whipping cream 30% very cold
  • 1 cc natural vanilla extract
  • 45 g icing sugar
  • 500 g gariguette strawberries
Prepare in advance 
Biscuit base
  • In a blender, crush the cookies into crumbs. Melt the butter in the microwave then mix with the mixed biscuits.
  • Press the crushed biscuits into the bottom of a 20cm pastry ring placed on a serving plate. Press down firmly with the back of a spoon or a glass. Refrigerate for 30 minutes.
Garnish
  • In the bowl of a stand mixer or a large mixing bowl, pour the very cold single cream, mascarpone, and vanilla extract. Whisk at medium speed. Add the icing sugar when the whipped cream begins to form.
  • Whip until you get firm whipped cream.
  • Fill a piping bag fitted with a round nozzle.
  • Remove the pastry ring from around the biscuit base. Pipe domes of cream around the edge and inside to cover it generously. Refrigerate while you prepare the strawberries.
  • Wash, hull and cut the strawberries in half lengthwise.
  • Place the strawberries on the cream domes, pressing them tightly together. Refrigerate until ready to serve!

    This is a recipe I make very often, but with more cream and less mascarpone. I'll try it with your proportions and see... Personally, I finish the recipe by glazing the tart with a little strawberry jam. About 2 tablespoons heated for +/- 15 seconds in the microwave and spread with a brush. It shines and adds a light, delicious layer of sugar. Yum

    I made it for work, everyone loved it and asked me for the recipe! I now only use your website to make my recipes, and they always turn out well!

    Light and rich in flavor, perfect for a dessert at the end of a meal, during summer weather!
