I say a big YES to comforting recipes this season, the ones we happily prepare on rainy afternoons (and others too). Like these White Chocolate, Macadamia and Cranberry Cookies: both crunchy and slightly sweet, the perfect cookies to dip in your cup of tea/coffee to give yourself a little break.

The combination of macadamia nuts and white chocolate is really ideal. If you have trouble getting your hands on macadamia nuts (I found these in an organic coop), you can also try the recipe with cashew nuts for example. The dried cranberries bring their little tangy touch, it's not for nothing that it's one of my favorite dried fruits!

For the sugar, I use whole sugar in this recipe. You can find it in organic co-ops of course but they are also sold today in supermarkets (organic section). It is a healthier alternative to refined sugar, think about it when the recipes allow it.

Amount : 15 Cookies

Prepare in advance 20 minutes
Cook time 10 minutes

Ingredients 
  • 220 g all-purpose flour
  • 110 g soft soft butter
  • 130 g whole sugar
  • 1 oeuf large caliber
  • 1 cc natural vanilla extract
  • 1/2 tsp baking soda
  • 1/2 cc baking powder
  • 1/4 this salt
  • 110 g White chocolate
  • 80 g chopped macadamia nuts
  • 60 g dried cranberries
Prepare in advance 
  • Beat the soft butter and sugar to obtain a creamy mixture.
  • Add the vanilla, and the beaten egg. Mix well to have a homogeneous consistency.
  • In a bowl, sift the flour, baking powder, baking soda and salt.
  • Gradually incorporate the dry ingredients into the dough.
  • Roughly chop the white chocolate and add them to the dough (keep a little for garnish).
  • Also add the cranberries and chopped walnuts (keep a little for garnish).
  • Using an ice cream scoop, place cookie dough balls on a baking sheet covered with baking paper, spacing them well apart.
  • Crush the dough balls with the palm of your hand and decorate with the remaining elements (chocolate / cranberries / nuts).
  • Refrigerate the baking sheet for 15 minutes.
  • Heat the oven to 160 ° traditional heat and bake for about 10 minutes (until the edges of the cookies are golden). Let cool on a baking sheet then transfer to a grill until completely cooled (or devour them before!)
Notes
Keeps for several days in an airtight box.
